Below you will find a collection of favourite cocktail recipes from the bar at our Farmhouse Restaurant. Visit our Farmstore, or your local liquor store and recreate your Merridale memories at home. 

 

Hot Toddy Kit 

1 oz Cowichan Spiced Rhumb

1 tbsp Apple Blossom Honey

Juice of one lemon

1/2 cup hot water

Lemon slice

 

Combine 1oz. of Cowichan Spiced Rhumb, honey and lemon juice in a Merridale mug, mix with hot water and garnish with a lemon wedge

 

Mulled Cider

1L House Cider

1/4 packages spice mix

Combine in a pot and  slowly warm on low for 30 minutes. Strain and serve hot.

Merridale's Ginger Syrup

Cyser Cider

Angostura Bitters

1 Lime or Lime Juice

Combine 1oz. of Cowichan Copper Gin, 1oz. Ginger simple syrup, two dashes of Angostura Bitters and 1/2 oz. of lime juice, into a shaker with ice.

Shake vigorously then strain into a glass with ice. Top with Cyser cider.

Esquimalt Wine Co. Dry Vermouth

Fresh Lemon Juice

Sprite

Step 1: Make the Cowichan Spirits Black Tea Infusion: Combine 1 cup vodka and 1 cup gin in a pitcher. Add in 8 black tea bags, cover with saran wrap and refrigerate. After 24 hours, remove the tea bags and pour into spirit bottle.

Step 2: Combine 1 oz. of Cowichan Spirits Black Tea Infusion with 1/2 oz. of Esquimalt Wine Co. Dry Vermouth and 1/2 oz. of Fresh Lemon Juice in a shaker with ice. Shake and strain into a tall glass with ice. Top with Sprite. Stir and serve.

Peychaud’s Bitters

Tonic

Combine 1oz. Cowichan Gin, 1oz. Fennel Citrus simple syrup,

2 dashes of Peychauds bitters in a glass with ice and top with tonic.

Combine 1oz. Cowichan Vodka, 1oz. Lavender-Lemon simple syrup in a glass with ice and top with soda.

Mo’Moro Cider

Fresh Squeezed Orange Juice

Lemon Wedge

Combine ½ oz. Merridale Cowichan Cider Brandy, ¼ oz. Merridale Fennel Citrus Syrup, ½ oz. fresh squeezed orange juice, the juice from one squeezed lemon wedge in shaker with ice. Shake vigorously and strain into a martini glass. Top with Merridale Mo’Moro Cider.

 

Spiced Rhumb Mojito

Cowichan Spiced Rhumb 

Merridale's Ginger Syrup  

Fresh squeezed lime juice

Fresh mint leaves

Soda

Combine 1 1/2 oz. Merridale Cowichan Spiced Rhumb, 1 oz. Merridale Ginger Syrup, 3/4 oz. fresh squeezed lime juice, 5 mint leaves into shaker with ice. Shake vigorously and empty contents into 14oz sleeve. Top with soda water and stir.

Cowichan Cherry Brandy

Cowichan Cherry Liqueur

Merri Berri Cider

Esquimalt Wine Co. Rosso Vermouth

2 dashes Peychaud’s Bitters

Combine 1/2 oz. each of Cowichan Cherry Brandy, Cowichan Cherry Liqueur and Esquimalt Wine Co. Rosso Vermouth, along with 2 dashes of bitters in a shaker with ice. Shake and strain into a martini glass. Top with 2 oz. of Merri Berri cider.

Merridales' Cider Gastrique

Combine 1oz. Merridale Oaked Harvest cider, ½ oz. Cowichan Cider Brandy, ½ oz. Merridale Cider Gastrique and ½ oz. Merridale Apple Juice in a shaker with ice and shake vigorously. Strain into a martini glass.

Fresh Squeezed Lemon Juice 

Fresh Squeezed Lime Juice

1 Egg White

Soda Water

Combine 1oz. Cowichan Copper Gin, 1oz. Fennel Citrus simple syrup, ½ oz. fresh lemon juice, ½ oz. fresh lime juice and one egg white in a shaker without ice. Shake vigorously, then add ice to the shaker and shake vigorously again. Strain into a glass with ice and top with 1-2oz. soda water.

Merri Berri Cider

Peychaud’s Bitters

Fresh Squeezed Lime Juice

Combine 1oz. Cowichan Rhumb, 1oz. Rosemary Cinnamon simple syrup, two dashes Peychaud’s Bitters and ½ oz. fresh lime juice in a shaker with ice and shake vigorously. Strain into a glass with ice and top with Merri Berri.

 

Fallin Apples

Cowichan Spiced Rhumb

Apple Pie Cider

1 slice lemon wedge

Combine 1oz Cowichan Spiced Rhumb and 1oz Merridale Ginger Syrup in a cocktail shaker over ice. Shake vigorously then strain into a sleeve glass over ice. Add one lemon wedge into the middle of the glass and fully cover with Apple Pie Cider.

Merridale's Rosemary Cinnamon syrup 

Mo'Moro Cider

Lime juice & Rosemary Sprig

Combine 1oz Cowichan Gin and 1oz Merridale Rosemary Cinnamon Syrup and 1oz lime juice in a cocktail shaker over ice. Shake vigorously then strain into a sleeve glass over ice. Top with with Mo'Moro cider and garnish with a fresh rosemary sprig.

Fennel Citrus syrup

Jalisco Cider 

Cardamom Bitters

1 lime wheel for garnish

Combine 1oz Cowichan Vodka and 1oz Merridale Fennel Citrus Syrup in a cocktail shaker over ice. Shake vigorously then strain into a sleeve glass over ice. Top with Jalisco Cider and garnish with a lime wheel. 

Cowichan Rickey

Cowichan Copper Gin or Cowichan Rhumb 

Merridale's Lemon Lavender simple syrup

Fresh Squeezed Lime Juice

Soda water

1 lemon wheel for garnish

Combine 1oz Cowichan Copper Gin or Cowichan Rhumb with 1oz Merridale Lemon Lavendar Syrup and 1/2oz lime juice in a cocktail shaker over ice. Shake vigorously then strain into a rocks glass over ice. Top with soda and garnish with a lime wheel.
