We love our farm in Cobble Hill, and it will always be our primary location for producing cider and spirits and hosting events. That said, after several years of planning we are really excited to be branching out with a new 12,000 square foot facility in the trendy Dockside Green area of Victoria. The concept is to build on the successful brewing and distilling techniques that we’ve become renowned for and bring Merridale at the Farm to Merridale in the City.
With a focus on sustainability, Merridale at Dockside will feature an open layout, where people can not only enjoy the products, but also see and smell the process too. Our customers will have the opportunity to learn about the brewing and distilling process when they visit – tours and hands on experiences will be woven into the products we offer. Of course, we will also focus on local ingredients. Although we won’t be making cider at this location, you will be able to find it fresh on tap.
We searched for a long time for the right location. We wanted to be close to the city, and near a community so people could walk or cycle to our establishment. We also wanted to own the property and be close to the waterfront. The facility is being built to LEED standards (Leadership in Energy and Environmental Design) which is a globally-recognized rating system for measuring the sustainability of development and construction projects. We’ll be introducing state-of-the art energy and rainwater recovery systems and adding extra bike parking.
In addition to the state-of-the-art distillery and brew house, Merridale at Dockside will include a tasting bar, pizzeria, sidewalk patio and a rooftop bistro with sweeping harbourside views. Inside, the second floor will have a mezzanine with a raised catwalk to allow for a 360º tour of the distillery and brewery operations. Throughout will be works of art created by up-and-coming local artisans.
Following the concept of creating a vibrant healthy community where the residents want to live, work and play, Merridale at Dockside will be a place for like-minded locals and visitors to come together and celebrate the culture and the very essence of Vancouver Island.
