Distilled and barrelled from organic malt in 2007, we had only one barrel of our limited release whisky. This whisky began its life in 2007 in a new French Oak barrel made by Okanagan Barrel Works. In November 2012, we decided the whisky needed more of a Merridale feel. After our first batch of Cowichan Cider Brandy was removed from barrel, we moved the whisky into it to create a softer finish.
In loving memory of the men named Jack in our lives who cherished whisky, we thought it fitting to name our first and last barrel of whisky after them. Janet’s father, Jack Docherty, passed in 1983 and loved a good glass of whisky with his friends. Rick’s dad, Jack Pipes, who died in 2012, used to sit down each night before supper with a dram of his favourite malt spirit. Janet’s grandfather, Jack Crean, also loved his whisky. Our Whisky Jack's gave us a wonderful opportunity to toast these men while it lasted.
